This is a recipe by Justine from @imakefoodnotfriends. Chinese Hot Oil Noodles called ‘You Po Mian’ 油泼面. Enjoy:)

Serves 1
Cooking time: 20 minutes
Ingredients:
2 servings of Shrimp Roe noodles
1 egg
A handful of greens (spinach, chow sum, baby bok choy)
For the sauce
2 teaspoon soy sauce
1 teaspoon mirin
1 teaspoon sesame oil
OKAZU chili miso and chilli flakes, to taste
For the hot oil
2 1/2 tablespoons oil
Pepper flakes
Minced garlic
Chopped scallion
Chopped cilantro
Directions:
- Boil a pot of water and cook the noodles for 2 minutes. In the same pot, blanch the greens until cooked. Drain. In a separate pot, boil the egg for 7 minutes. Rinse under icy cold water to easily remove the shell.
- Add the cooked noodles and greens to a heatproof bowl. Top with the scallion, cilantro, and minced garlic. In a bowl, mix together the soy sauce, mirin, sesame oil, OKAZU and chilli flakes. Pour over noodles.
- In a small pot, heat the oil until shimmering. Carefully pour the hot oil over the bowl of noodles. Finally add the egg, top with extra OKAZU, and serve!
