In Japan、 there is a term called ”B級グルメ”. The literal translation of this word in English is B-Grade Gourmet, but more precisely, it means “Budget Friendly Food” or “Affordable Food”. Okonomiyaki, which I will introduce today, is a typical B級グルメ food that everyone loves! It is not a luxury meal, but rather inexpensive, commonplace, yet reputedly tasty food.
My mom used to make okonomiyaki for Sunday lunch. I would like to share this recipe with you. Enjoy !

Ingredients:
★1+ 1/2 cup All Purpose Flour
★2Tablespoon Japanese Soup Stock Dashi
★1Tablespoon Baking Powder
★2 Eggs
★1 cup Water
200g Coarsely Shredded Cabbage
Sauce :
4 Tablespoon Ketchup
4 Tablespoon Japanese Worcestershire Sauce
2 Tablespoon Oyster Sauce
Garnish with:
Handful of Dried &Smoked Bonito Flakes
Handful of Shredded Dried Nori (Seaweed)
Sauce (See above)
Mayonnaise
Directions:
1. Put the ★ ingredients in a bowl and mix well. It is better to dissolve the dashi in water (lukewarm water) once before adding.
2. Add coarsely shredded cabbage to bowl 1 and mix well.3. Put 2 in a pan with more oil, shape into a round and cook over low to medium heat.
4. When browned, turn over and cook slowly over low heat until cooked inside.
Do not press on the top as it will harden.
5. When it's cooked all the way through, it's done!
It is easier to do this by placing a plate against the pan and turning the whole pan over onto a plate.
6. Spread sauce and mayonnaise and sprinkle with bonito flakes and nori to taste.
Options include adding cheese, mochi, shrimp, squid, thinly sliced meat, etc. And of course, Abokichi Okazu. It will enhance the flavor!
