Easy Hot Oil Noodles: You Po Mian (油泼面)

Ingredients
- 2 servings of Shrimp Roe noodles
- 1 egg
- A handful of greens (spinach, chow sum, baby bok choy)
Sauces:
- FOR THE SAUCE:
- 2 teaspoon soy sauce
- 1 teaspoon mirin
- 1 teaspoon sesame oil
- OKAZU Chili Miso, to taste
- chilli flakes, to taste
- FOR THE HOT OIL:
- 2 1/2 tablespoons oil
- pepper flakes
Garnish with:
- Minced garlic
- Chopped scallion
- Chopped cilantro
Directions:
- Boil a pot of water and cook the noodles for 2 minutes. In the same pot, blanch the greens until cooked. Drain. In a separate pot, boil the egg for 7 minutes. Rinse under icy cold water to easily remove the shell.

Add the cooked noodles and greens to a heatproof bowl. Top with the scallion, cilantro, and minced garlic. In a bowl, mix together the soy sauce, mirin, sesame oil, OKAZU and chilli flakes. Pour over noodles.
- In a small pot, heat the oil until shimmering. Carefully pour the hot oil over the bowl of noodles. Finally add the egg, top with extra OKAZU, and serve!
