Chicken Pâté OKAZU Pasta

Ingredients

  • 150g spaghetti
  • 20g butter
  • ½ small onion, finely chopped
  • 1 clove garlic, finely chopped
  • 2 Tbsp chicken liver pâté
  • 1 Tbsp sherry, white wine, or lemon juice
  • 1 Tbsp OKAZU Curry Miso
  • 10 grapes, rinsed and cut into quarters
  • 250g boneless, skinless chicken breast, cut into ½ -inch wide strips
  • 1 red pepper cut into thin strips (optional)

Directions:

  1. Bring a large pot of salted water to boil over high heat. Add the pasta to the boiling water and cook until al dente, approx. 9 minutes. Reserve 1/2 cup of pasta water before draining the pasta.
  2. While the pasta cooks, melt the butter into a large frying pan over medium heat. Add the red pepper and onions to the pan, and sauté until softened, 2-3 minutes. Add the chicken strips to the pan and continue cooking, stirring often, until the chicken’s browned and cooked through, 3-5 minutes.
  3. Add the pâté and the garlic to the pan and stir until the pâté melts. Add the sherry, wine (or lemon juice), OKAZU and the grapes to the pan, then pour in the reserved pasta water, just 2-3 tbsp. at a time, until a sauce forms that coats the chicken pieces and will soon coat the pasta. Season with salt according to taste.
  4. Toss the pasta with the pate sauce and chicken pieces, top with extra OKAZU and serve.
