Jerky that everyone can enjoy. Chewy, super umami packed snack that’s perfect for a snack tray, road trip or picnic.

  • 1½ cups Dried mushrooms (We used shiitake)
  • ¼ cup coconut oil
  • ⅛ cup soy sauce
  • 2 Tbsp maple syrup
  • 2 Tbsp OKAZU (any flavour)
  • 1 Tbsp ABO Miso Soup paste (original flavour)
  • ¼ tsp ground black pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp rice vinegar
  • 1 tsp shikuwasa juice (or lemon or lime)

Directions:

  1. Cut mushrooms into pieces about the size of a thumb. 

  2. In a medium sized bowl, melt coconut oil in the microwave. Mix in all the seasonings and wet ingredients. Pour in mushrooms and toss to coat them. 

  3. Pour the mushroom mixture into a small saucepan. Over medium-high heat, add enough water to submerge mushrooms about 75%.

  4. Bring to a boil, reduce to simmer and cook covered for about 30minutes.

  5. Check and stir periodically, adding some water if necessary.

  6. Once the mushrooms are soft and have absorbed most of the liquid, dehydrate at 150F for 6 hours. In an oven, spread in a single layer on a cookie sheet and use lowest possible temperature and adjust timing accordingly.
