Food waste is almost inevitable in the process of food production. Much of the byproduct food wastes end up in the landfill or is used for livestock feed.

Globally, if food waste was a country, it would be the third-largest greenhouse gas emitter in the world. In Canada, over half the food we produce in the country is being thrown away. This costs billions each year, and the environmental and social impact is unthinkable, particularly when over 4 million Canadians are food insecure.

Upcycled Foods is a movement to solve this problem by creating new, high-quality products from food wastes that are normally thrown away. These products are made from ingredients not traditionally consumed, but that are sourced and produced using verifiable supply chains, resulting in a positive environmental impact. .

Abokichi believes in saving food waste by using upcycled ingredients in their products. Reducing and diverting waste is a core value of the company.

Based on our guiding principle "Heritage Inspired And Driven to Innovate” we focused on Okara. Okara is a byproduct of tofu and soy milk production. Our goal is to upcycle this byproduct into a food product that is healthier for the body and the earth, and do something that has not been done before. 

As a result, Abokichi Miso Soup and ABO Ramen Fresh, which not only the noodles but also the soup is made of upcycled foods, were developed and commercialized.
