OKAZU Mushroom Quesadilla

Ingredients

  • 4 pcs tortilla wrap (home-made or store bought)
  • 1 red onion, sliced
  • 1 spring onion, sliced
  • 2 sprigs chives, sliced
  • 100g Enoki mushrooms, roots removed, separated to small bunches
  • ½ cup favorite melting cheese/s (may be replaced with vegan cheese)
  • OKAZU Spicy Chili Miso

Directions:

  1. On a pan over medium heat, add the oil and add the mushrooms. Season with salt, and sear the mushrooms until they are golden brown.
  2. Lower the heat and using the same pan, remove the excess oil, and add a tortilla wrap.
  3. Layer a generous amount of the cheese/s, onion, spring onion, chives and seared mushrooms. Drizzle with OKAZU Spicy Chili miso, add more cheese, and another tortilla wrap.
  4. When the bottom tortilla wrap is golden brown, flip the tortilla and cook the other side.
  5. Place the cooked tortilla on a chopping board, and cut to desired size. May garnish with more OKAZU, spring onion and chives.
