OKAZU Mushroom Quesadilla
Look no further for a quick and delicious spicy quesadilla recipe using OKAZU Spicy Chili Miso!
Ingredients
- 4 pcs tortilla wrap (home-made or store bought)
- 1 red onion, sliced
- 1 spring onion, sliced
- 2 sprigs chives, sliced
- 100g Enoki mushrooms, roots removed, separated to small bunches
- ½ cup favorite melting cheese/s (may be replaced with vegan cheese)
- OKAZU Spicy Chili Miso
Directions:
- On a pan over medium heat, add the oil and add the mushrooms. Season with salt, and sear the mushrooms until they are golden brown.
- Lower the heat and using the same pan, remove the excess oil, and add a tortilla wrap.
- Layer a generous amount of the cheese/s, onion, spring onion, chives and seared mushrooms. Drizzle with OKAZU Spicy Chili miso, add more cheese, and another tortilla wrap.
- When the bottom tortilla wrap is golden brown, flip the tortilla and cook the other side.

Place the cooked tortilla on a chopping board, and cut to desired size. May garnish with more OKAZU, spring onion and chives.
