This is a recipe by Justine from @imakefoodnotfriends. Chinese Hot Oil Noodles called ‘You Po Mian’ 油泼面. Enjoy:)
2 servings of Shrimp Roe noodles
A handful of greens (Spinach, Chow Sum, or Baby boy choy)
For the sauce:
2 teaspoon soy sauce
1 teaspoon mirin
1 teaspoon sesame oil
Okazu oil and chilli flakes, to taste
For the hot oil:
2 1/2 tablespoons oil
For the toppings:
2 cloves minced garlic
Chopped scallion for topping
Chopped cilantro for topping
Boil a pot of water and cook the noodles for 2 minutes. In the same pot, blanch the greens until cooked. Drain. In a separate pot, boil the egg for 7 minutes. Rinse under icy cold water to easily remove the shell.
Add the cooked noodles and greens to a heatproof bowl. Top with the scallion, cilantro, and minced garlic. In a bowl, mix together the soy sauce, mirin, sesame oil, and Okazu oil and chilli flakes to taste. Pour over noodles.
In a small pot, heat the oil until shimmering. Carefully pour the hot oil over the bowl of noodles. Finally add the egg, top with extra Okazu, and serve!
