OKAZU Soba Noodles with Miso Avocado Sauce

A perfect bowl of noodles for a hot, summery day. Recipe adapted from Oh She Glows. Our friend Stefanie created this amazing vegan recipe using OKAZU. Try out the recipe below. Ingredients

  • 9 oz soba noodles
  • 1 large avocado
  • 2 Tbsp white miso
  • 1 garlic clove
  • 2 Tbsp green onion (green part), chopped
  • 2 Tbsp lemon juice
  • 2 Tbsp water
  • Salt, to taste
  • OKAZU Chili Miso, to taste
  1. Cook soba noodles according to package directions. Rinse with cold water and set aside.
  2. Scoop out the flesh from the avocado and add to a food processor. Add the miso, garlic, chopped green onion, lemon juice and water. Process until smooth.
  3. Toss the soba noodles in the sauce. Add a heaping tablespoon of Okazu (or more!)

NOTES
Add your favourite vegetables to customize this meal. I'm eager to make this again using shelled edamame, broccoli and carrots.
